Potatoes & base

  1. Potatoes (small/medium), peeled and cubed: 2 medium (~450 g)
  2. Oil: 1–2 tbsp
  3. Cumin seeds: 1/2 tsp
  4. Onion (finely chopped): 1/2 medium (optional but tasty)
  5. Garlic (minced) : 2 cloves (optional)
  6. Ginger (grated): 1 tsp

Spices

  1. Turmeric: 1/4 tsp
  2. Red chilli powder: 1/2–3/4 tsp (to taste)
  3. Coriander powder: 1–1.5 tsp
  4. Garam masala: 1/4 tsp (optional)
  5. Roasted cumin powder: 1/2 tsp (optional; gives “Sindhi” warmth)
  6. Sugar: a pinch (optional; balances tang)
  7. Salt: to taste

Tang + finishing

  1. Tamarind pulp OR lemon juice: 1–2 tsp (choose one)
  2. Fresh coriander leaves: 2 tbsp

Water

  1. Water: 1/3–1/2 cup (as needed)
  2. Optional: 1–2 tbsp besan (for a slightly thicker gravy)

Method (step-by-step)

  1. Prepare potatoes:
  2. Cube potatoes into medium chunks (about 1.5–2 cm). Keep aside.
  3. Temper spices:
  4. Heat oil in a pan on medium heat. Add cumin seeds. Let them splutter.
  5. Cook onion/ginger-garlic (if using):
  6. Add chopped onion. Cook 4–5 minutes until soft and light golden.
  7. Add ginger (and garlic) and sauté 30–60 seconds.
  8. Add spice powders:
  9. Reduce heat to low. Add turmeric, chilli powder, coriander powder, and (optional) roasted cumin powder.
  10. Stir for 20–30 seconds—don’t burn.
  11. Add potatoes + water:
  12. Add cubed potatoes. Mix well to coat with masala.
  13. Add water (start with 1/3 cup). Cover and cook on medium-low for 15–20 minutes, stirring occasionally, until potatoes are tender.
  14. Tang adjustment + final masala:
  15. Add tamarind pulp/lemon juice and a pinch of sugar (if using).
  16. Simmer uncovered 2–3 minutes to thicken slightly.
  17. Add garam masala (optional) and chopped coriander.
  18. Serve:
  19. Serve hot with roti/phulka or rice.

Texture tips

  1. If too watery: simmer uncovered 3–5 minutes.
  2. If you want thicker gravy: mix 1 tbsp besan with a little water and add in the last 5 minutes.

Nutritional benefits (for potatoes + spices)

  1. Potatoes provide energy: Potassium and carbohydrates help keep you full.
  2. Fiber support (depending on peel habits): Potatoes (especially when cooked with skins) contribute some fiber.
  3. Spices boost flavor without needing lots of oil: cumin, coriander, turmeric enhance taste and may support digestion.
  4. Tang (tamarind/lemon) adds freshness: helps balance spice and can improve overall palatability (so you may use less salt).
Note: Exact nutrition depends on oil quantity and whether you add any thickener (like besan).

Estimated nutritional value (for 2 portions)
