Ingredients
Dough
- 360 g bread flour (or all-purpose)
- 1 tbsp sugar
- 2 1/4 tsp instant yeast (1 packet)
- 1 tsp salt
- 1 tbsp olive oil (or neutral oil)
- 240 ml warm plant milk (soy/oat/almond), about 40–45°C
- 1–2 tbsp extra plant milk (for brushing), optional
- 1 tbsp ground flax + 3 tbsp water (optional “flax egg”, helps softness)
Optional topping
- Sesame seeds (or poppy seeds)
Vegan egg wash (for browning, optional)
- 2 tbsp plant milk + 1 tsp maple syrup (or a little oil)
- Alternative: just plant milk also works.
Detailed steps
1) Mix dough (5–10 min)
- In a large bowl, combine flour, sugar, yeast, and salt.
- Add warm plant milk and oil.
- Mix until a rough dough forms.
- Knead:
- By hand: 8–10 minutes until smooth and elastic
- Stand mixer: 5–7 minutes on medium
(If using flax egg, add it with the wet ingredients.)
2) First rise (60–90 min)
- Place dough in a lightly oiled bowl.
- Cover and let rise until doubled in size.
3) Shape buns (10 min)
- Punch down dough.
- Divide into 8 equal pieces (~80–90 g each).
- Roll each into a ball, then slightly flatten into bun shapes.
- Place on a parchment-lined baking tray, leaving space between.
4) Second rise (25–35 min)
- Cover and let rise until puffy (almost doubled).
5) Bake (12–18 min)
- Preheat oven to 190°C / 375°F.
- Brush tops with vegan wash (plant milk + a touch of maple syrup).
- Sprinkle sesame seeds if using.
- Bake 12–18 minutes, until golden brown.
- Cool on a rack for at least 15 minutes before slicing.
