Cashew mayonnaise

How to make it

Cashew Mayonnaise with tofu, garlic & nutritional yeast

Yield

  1. Makes about 1 cup (250–300 g) (enough for ~8–10 sandwiches depending on thickness)

Ingredients

  1. Firm tofu: 200 g (about 7 oz)
  2. Cashews (raw), soaked 30–60 min: 1/2 cup (60 g)
  3. If not soaked, use very hot water blend + add extra water.
  4. Nutritional yeast: 1–3 tbsp (start with 1 tbsp; add more for stronger “cheesy” flavor)
  5. Garlic: 1 small clove, grated (or 1/2–1 tsp garlic paste)
  6. Salt: 1/2–3/4 tsp (to taste)
  7. Lemon juice or vinegar (recommended): 1–2 tbsp
  8. (helps mayo tang + stabilizes flavor)
  9. Water (as needed): 2–6 tbsp for blending
  10. Oil (optional but recommended for true mayo mouthfeel): 1–2 tbsp neutral oil

Method

  1. Soak & prep cashewsSoak cashews in water for 30–60 minutes, then drain.
  2. Blend baseIn a blender, add: soaked cashews, tofu, nutritional yeast, grated garlic, salt, lemon/vinegar.
  3. Blend until totally smooth (scrape down sides once).
  4. Adjust thicknessWith blender running, add water 1 tbsp at a time until you reach the texture you want:
  5. Thick spread: less water
  6. Drizzleable: more water
  7. (Optional) Add oil for richnessBlend in 1–2 tbsp oil if you want it more “classic mayo”.
  8. Taste & restTaste and adjust salt/yeast/garlic.
  9. Chill at least 20–30 minutes for best flavor and thickening.

Storage

  1. Refrigerate in a sealed container: up to 4–5 days.

Nutritional value (estimated)

Because ingredients are mostly nuts + tofu and there’s a range in nutritional yeast/oil, I’ll estimate using the recipe as written:

Assumptions used for estimates

  1. Cashews: 60 g (1/2 cup)
  2. Tofu: 200 g firm
  3. Nutritional yeast: 2 tbsp (medium-strong “cheesy”)
  4. No added oil (or optional oil kept minimal)
  5. Final yield ~260 g

For the whole batch (~1 cup)

  3. Carbs: ~20–35 g
  4. Fat: ~55–75 g
  5. Fiber: ~8–12 g
  6. Sodium: varies based on salt (mostly your control)

Per 1 tbsp (about 15 g)
