Dry bhurma aloo

How to make it

Dry Bhurma Aloo is a comforting, spice-coated potato stir-fry. Raw potatoes are cut into fry-like pieces, lightly sautéed with salt and turmeric, then tossed with a prepared spice blend of besan, salt, turmeric, chili powder, coriander powder, and asafoetida. A quick splash of water helps everything come together into a dry, flavorful coating.

Dry Bhurma Aloo (Fries-style) — Detailed Recipe Process

Ingredients

For the potatoes

  1. Raw potatoes: 2 medium (about 300 g)
  2. Salt: 1/2 tsp (adjust)
  3. Turmeric powder: 1/4 tsp

For the spice-besan mixture

  1. Besan (chickpea flour): 3 tbsp
  2. Salt: 1/2 tsp (adjust)
  3. Turmeric powder: 1/4 tsp
  4. Chili powder: 1/2 to 1 tsp (as per spice level)
  5. Coriander powder: 1 tsp
  6. Asafoetida (hing): 1/8 tsp (a pinch)
  7. Optional: 1–2 tsp water (only if needed to make it slightly mixable)

For cooking

  1. Oil: 2–3 tbsp (for sautéing)
  2. Fresh coriander leaves: 2–3 tbsp, chopped
  3. Water: 2–4 tbsp (splash as needed)

Serve with

  1. Plant yogurt
  2. Roti (or chapati)

Step-by-step Process

1) Prepare the potatoes

  1. Wash and peel (optional).
  2. Cut into fries-style pieces (small sticks or fry size).
  3. Try to keep sizes similar so they cook evenly.
  4. (Optional but helpful) If potatoes release lots of starch, rinse briefly and drain well.
  5. Pat dry with a towel if they look wet—this helps spice coating.

2) Make the prepared spice-besan mixture

In a bowl, mix well:

  1. Besan + salt + turmeric + chili powder + coriander powder + hing
  2. Stir until you see an even color (no dry flour pockets).
Tip: Keep it dry for now. You’ll add it to potatoes and then use a splash of water to cook through.

3) First sauté (salt + turmeric stage)

  1. Heat oil in a pan on medium heat.
  2. Add the cut potatoes.
  3. Sprinkle salt and turmeric.
  4. Sauté, tossing occasionally, until:
  5. potatoes are partially cooked (roughly 6–10 minutes, depending on size)
  6. they should be less hard but not fully cooked.
Don’t overcook in this stage—this is where we build the dry bhurma coating next.

4) Add the prepared mixture (the “dry bhurma” coating)

  1. Lower heat to medium-low.
  2. Add the prepared besan spice mixture to the pan.
  3. Toss/mix very well so most potatoes get coated.
  4. Cook for 1–2 minutes without adding water yet (this toasts the besan slightly and helps it stick).

5) Splash water to cook through (important!)

  1. Add small splashes of water (not too much).
  2. Start with 1–2 tbsp, then toss.
  3. Continue adding a little at a time as needed.
  4. Cook 5–8 minutes (covered loosely if needed) until:
  5. potatoes are fully tender
  6. the besan coating looks dry, crumbly, and well-browned
  7. no raw flour taste remains
Key technique: Add water gradually. If you add too much, it becomes gravy/saag-like and won’t stay “dry bhurma.”

6) Final adjust + garnish

  1. Taste and adjust salt/chili if required.
  2. Turn off heat.
  3. Garnish with fresh chopped coriander.
  4. Rest for 2 minutes so the coating sets.

Serving

Serve hot with:

  1. Plant yogurt (cooling contrast)
  2. Roti

Troubleshooting (quick fixes)

  1. Potatoes not cooked through: cook longer on medium-low; add tiny splashes of water only as needed.
  2. Besan coating too dry / powdery: add 1 tsp water at a time, toss, and cook 1 minute.
  3. Too sticky or wet: cook uncovered on medium-low for 2–4 more minutes to dry it out.
  4. Burning: lower heat—besan can brown quickly once added.
