How to make it
Mexican Red Bean Tacos (Vegan) + Cheesy Melt (Cashew–Tofu)
Yield / Portion
- 2 tacos per person (you can scale up easily)
Ingredients
For the Red Bean Topping
Base
- 1 tbsp oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1–1½ cups cooked red beans (or 1 can, drained & rinsed)
- 1/2 cup tomato purée (or crushed tomatoes)
- 1–2 tbsp water (as needed)
Mexican pantry spices
- 1–1½ tsp chili powder (or ancho/chipotle if you have)
- 1 tsp cumin
- 1 tsp smoked paprika (optional but great)
- 1/2 tsp oregano (Mexican oregano if possible)
- Salt + black pepper to taste
- Optional: pinch of sugar (balances tomato/tanginess)
For the Cheesy Melt (Sticky Vegan “cheese”)
- 2/3 cup (or ~80–100 g) cashew tofu (cashew + tofu blend)
- (If using plain tofu/cashews instead, tell me ratios and I’ll adjust.)
- 2–3 tbsp tapioca starch
- 2–3 tbsp nutritional yeast
- 1/2–1 tsp salt (to taste)
- 1–2 tbsp lime juice or a splash of water (helps flavor/texture)
- Water as needed (~1/2 to 3/4 cup) to make a lump-free runny batter
Goal texture before heating: like a thin batter. After heating: thick, glossy, “stretchy-sticky” melt.
To Assemble
- Taco shells or tortillas (corn or flour)
- Oil/optional: toast tortillas lightly in a pan
- Fresh toppings (optional but recommended):
- shredded lettuce/cabbage
- diced onion
- cilantro
- salsa
- lime wedges
Detailed Instructions
1) Cook/season the Mexican red beans
- Heat 1 tbsp oil in a pan over medium heat.
- Add onion and cook 3–4 minutes until softened.
- Add garlic and cook 20–30 seconds (don’t brown).
- Add tomato purée + spices:
- chili powder, cumin, smoked paprika, oregano, salt & pepper
- Stir for 30–60 seconds to toast spices.
- Add cooked red beans.
- Cook 8–12 minutes, stirring, until slightly thick.
- If it’s too thick: add a splash of water.
- Taste and adjust salt/chili.
Set aside.
2) Make the cheesy melt (no-lumps method)
- In a blender/whisk bowl, combine:
- cashew tofu + tapioca starch + nutritional yeast + salt + lime (optional)
- Add water gradually and blend/whisk until completely lump-free.
- Texture should be runny, like thin pancake batter.
- Heat the mixture in a small saucepan or pan on medium heat.
- Stir constantly for about 1 minute (sometimes 45–90 seconds depending on heat).
- It will thicken quickly into a sticky, glossy, gooey melt.
- Remove from heat and keep warm (it sets slightly as it cools).
3) Assemble tacos
- Warm tortillas/shells (quick toast in a dry pan for 10–20 seconds per side).
- Add a spoonful of spiced red beans to each taco.
- Add a small spoon or squeeze of the cheesy melt on top.
- Fold/serve immediately while melty.
Optional “restaurant style” tip: After adding cheese, heat assembled tacos for 30–60 seconds in a pan so the melt bonds.
Nutritional Value (estimated) — 2 tacos per person
Because nutrition depends heavily on exact flour/tortilla type and how much cheesy melt you use, I’ll give a solid estimate using common portions:
- 2 medium corn flour tortillas per serving (or similar)
- ~1/2 cup red beans per serving (split into 2 tacos)
- ~1/4–1/3 cup cheesy melt mix total per serving
