Soya Kebab balls

How to make it

Soya Kebab (Granulated Soya + Chana Dal) — Quick Recipe

Ingredients

  1. Granulated soya (textured soya): ~1 cup (dry)
  2. Chana dal: ~1/2 cup (soaked)
  3. Onion: 1 large (chopped)
  4. Garlic: 4–6 cloves (chopped/roughly)
  5. Green chili: 1–2 (adjust to taste)
  6. Fresh coriander leaves: 1/2 cup
  7. Salt: to taste
  8. Coriander powder: 1 tsp
  9. Cumin powder: 1/2–1 tsp
  10. Kashmiri red chilli powder: 1/2–1 tsp
  11. Chickpea flour (besan): 2–4 tbsp (as needed)
  12. Oil for deep frying

Method

  1. Cook the soya & chana dal
  2. Pressure cook granulated soya + soaked chana dal (add enough water).
  3. Cook until you get 1 whistle (or just until tender).
  4. Drain/squeeze out excess water from the cooked mixture.
  5. (This is key—otherwise kebabs break.)
  6. Grind/coarsely chop
  7. In a chopper/blender add:
  8. cooked granulated soya crumbles
  9. cooked chana dal
  10. onion, garlic, green chili
  11. coriander leaves
  12. salt
  13. coriander powder, cumin powder, kashmiri chilli powder
  14. Coarse grind (don’t make it smooth paste).
  15. Bind mixture
  16. Transfer mixture to a bowl.
  17. Add chickpea flour (besan) and mix well.
  18. If it feels too wet, add a bit more besan. If too dry, sprinkle 1–2 tsp water and mix again.
  19. Shape
  20. Make small ball-like shapes (or slightly flatten for kebab style).
  21. Fry
  22. Heat oil on medium heat.
  23. Deep fry until golden brown on all sides.
  24. Drain on tissue paper and serve hot.

Quick Tips (important)

  1. Squeeze water properly after pressure cooking—wet mixture = kebabs may crack.
  2. Don’t overcook the soya/chana dal; 1 whistle is usually enough.
  3. If mixture is loose while shaping, add 1 tbsp besan at a time.

Brief Nutritional Value (approx.)

  2. Protein: ~9–13 g (mainly from soya + dal)
  3. Fats: ~8–13 g (mostly from deep frying)
